Vanilla Avocado Smoothie

DO YOU KNOW WHAT HAPPENED THIS WEEKEND?

Yeah, Caps lock necessary. Because CHRISTMAS. And Apple Cider. And Decorating. And Family-ness. And this green Vanilla Avocado Smoothie that just happens to look superrrrr festive when you stick a red straw in it. Christmas morning breakfast, anyone?

No seriously, I’m not one of those people that advocates listening to Christmas Music before Halloween or anything, nor do I appreciate the fact that we barely get to enjoy Thanksgiving as a stand-alone tradition before Christmas mania sets in butttttttt….

Buttttttt……I’m admittedly little amped up this year. And I *might* have put up a Christmas tree two days before Turkey Day, which pretty much breaks my own philosophy of Thanksgiving as a stand-alone holiday.  I begged Sam to help me string up lights and listen to the Dean Martin version of all the Christmas carols because I’m just so ready to begin celebrating.

I think I’m appreciating Christmas and its traditions a little more this year, because last year was my first Christmas away from all the usual festivities I associate with the holiday. Korea knows how to do many things, but Christmas is not one of them. So this year, Sam and I have decided to take it-‘it’ being everything holiday related-up a notch. Or twenty.

And that’s the story of this Vanilla Avocado Smoothie. Sort’ve. I was tired from a long week of illness (guess which day is the worst day of the whole year to contract the stomach flu? Yep. Thanksgiving.) and in desperate need of something easy to eat/make/slurp that didn’t have a nutritional density of zero (hello, saltines and 7-Up). Without going into too much detail, let’s just say I was still in the recovery stages when the weekend rolled around, and was in major need of a holiday themed pick-me-up.

So I casually threw together this breakfast smoothie for me and Sam, popped an avocado in, and I swear the room got a little brighter. No, really. I know I was coming out of fogginess of illness, but I really think my brain cleared up a little bit:

This is super duper easy to make and takes only 5 minutes to whip up, PLUS it’s full of healthy fats from the avocado, keeping you full longer and helping you absorb nutrients for the remainder of your day.

And anything that tastes like a vanilla milkshake is always worth it, in my book. 🙂

Vanilla Avocado Smoothie

Ingredients

  • 1 ripe avocado
  • 1 banana, frozen in chunks
  • 2 t. vanilla
  • 1 c. coconut or almond milk
  • 1-2 T. honey
  • 1 T. ground flax seeds, optional
  • Chia seeds, optional

Instructions

  1. Blend all ingredients except chia seeds together until smooth, adding ice if necessary.
  2. Sprinkle with chia seeds and serve immediately.
